Château Rouge

Syrah with Grenache and Mourvèdre, the typical red grapes for Château Pas du Cerf red blending, makes this wine powerful and fullbodied with fruit, scrub and spicy aromas.Its authentic crimson color is the symbol of Provence nature and this exceptional Terroir.

Cépage

Syrah 80%, Grenache 10%, Mourvèdre 10%.

Vinification

1 month fermentation skin and inox tank aging.

COLOR: Clear, limpid with a pretty ruby color with purple lights.The tears are flowing with beautiful lights.

NOSE: Aromatic and complex aromas of crushed red fruits and spices as coriander, cumin and pepper. Then garrigue, rosemary and thyme aromas. Light smoky tastes appear then with a real complexity and richness.
MOUTH: Quickly freshness and then complex aromas like garrigue and fruit flavors that envelop absolutely the entire palate. The tannins are very pleasant and this wine has a very long persistent final A really pleasant wine with a lot of elegance, a beautiful freshness and a lot of smoothness. A very silky wine.

Harmonie mets et vins

A duck steak with Nepal pepper, a lamb navarin or a veal steak with chanterelle mushrooms match delicately with this Château Pas du Cerf red wine.

Temperature: 16°C.

Château Pas du Cerf Rosé 2019

A singular blend of Grenache and Tibouren, grape that grows only in Provence, Château Pas du Cerf rose vintage is a real gem in Provence, with subtility and personality. This high-level wine charms with its feminine pale pink color and with its aroma’s complexity and minerality.

Cépage

Grenache 90%, Tibouren 5%, Mourvèdre 5%.

Vinification

The skin maceration during 6 hours gives to this wine a nice aromatic complexity, the real expression of LA LONDE schisteous terroir.

Note de dégustation

COLOR: Light salmon color, flowing clear and crystalline tears.

NOSE: Aromas with bush peach, summer flowers and red fruits like redcurrant and raspberry. A nice elegant nose full of various overtones.
MOUTH: Like the nose, a lot of freshness, generous, round with a nice long and full of finesse final. This wine is charming, very tasty, generous and pleasant.

Harmonie mets et vins

Perfect with a Saint Pierre fish with capers, a roasted lobster with Provence herbs or also with a roasted veal shoulder. Grilled lamb with thyme, sea bass in a salt crust. pan-fried cockles with parsley and garlic, grilled pork marinated with thyme, rosemary, olive oil.

Can be aged from 1 to 2 years.

Château Pas du Cerf Blanc 2019

A subtill blend of Rolle and Clairette that gives to Château Pas du Cerf white wine its unique personality and its mineral typicity from our shisteous Terroir.

Pure and sensual, this bright wine describes our real Provence Art of Life.

Cépage

Rolle (Vermentino) 70%, Clairette 30%.

Vinification

The skin maceration during 6 hours gives to Château Pas du Cerf white wine its aromatic intensity.

Note de dégustation

COLOR: Pale yellow color with beautiful limpidity, bright crystalline lights. Flowing clear tears.

NOSE: Intense with lemon zests, grapefruit and little honeysuckle flavors with some white flowers’ flavors. Then mint, garrigue and mineral flavors. Great diversity, with overtones. A very pleasant wine.
MOUTH: An explosion of freshness and flavors: lemon and grapefruit zests and light mint flavors final flavors. A real full-bodied wine. A lot of freshness with a beautiful final. It is a charming, elegant, well balanced, generous and harmonious wine.

Harmonie mets et vins

Saint Pierre fish with laurel, chicken barbecues with curcuma or creamy Saint Félicien cheese match very well with Château Pas du Cerf white wine. Also perfect with a Scallop’s carpaccio, an asparagus and prawn’s risotto and with goat cheese.
